Vegan Mocha Caramel Nut Truffle Torte
1 c. flour
1 c. oats
½ c. sugar
16 oz. vegan butter
1 c. brown sugar (I used the kind that’s cut with Splenda)
1 c. chopped nuts
12 oz. chocolate chips
½ c. soy or almond milk
splash of kahlua (optional)
1 tsp cornstarch (optional)

I made a lot of mistakes with this recipe, as I am wont to do. I accidentally added too much sugar so then I had to double everything and then tried to divide it in half and that was kind of a mess. Then I used brown sugar cut with Splenda but didn’t realize that you’re only supposed to use half the normal amount in that case. Also, a quarter cup of soy milk ended up being a bit much for the caramel so I tried to add in flour to thicken it and then I tried boiling it to reduce it and oh man! I also feel like I should have used a larger pan, less butter in the crust, and I only needed about half of the caramel and chocolate.
Anyway, bottom line: It was amazingly delicious.
