Tonight, my roommate and I had dinner together which gave me a chance to snap a photo of the elusive vegan pizza.
He made salads for us with spring greens, spinach, and homemade salad dressing (from a recipe in How it All Vegan) and I made fat-free, vegan pizza crust (with apple sauce instead of oil– this crust is AMAZING!) with homemade tomato sauce, vegan mozzarella, vegan sausage, vegan pepperoni, sliced baby portabella mushrooms, and pineapple. We topped it with some homemade vegan parmesan cheese and red pepper flakes. From mixing bowl to dinner table, the pizza took about 25-30 minutes– that’s faster than Papa John’s!
Several people commented on how much they loved the Indian pizza last night and Maia said it reminded him of the pizza he used to eat at an Indian place when he lived in the Bay area. I told him that’s actually where I got the idea– Ben and I went to San Francisco one summer and ate a lot of vegan Indian pizza while we were there. Three years later, I still think about that pizza on a semi-regular basis. That was some good shit.
The wind is really howling tonight which I think means it’s time to curl up with a movie and maybe a glass of wine.
