2-3 tbsp homemade pistachio-cashew butter (or peanut butter– this is totally optional as I made the first batch without it and they tasted fine)
agave nectar (lower glycemic index than honey)
a few generous dashes of unsweetened cocoa powder (optional– could use cinnamon instead)
handful of chocolate chips (I was DYING, ok?)
splash of soy milk (I used vanilla, sweetened… DYING)
Preheat oven to 350 degrees.
Mix all ingredients.
Bake for about 10-15 minutes.
Best damn things I ever ate.
UPDATE: Whoa, news flash about these cookies! Apparently uncooked oats have like seven zillion calories in them! But if you leave out the peanut butter and divide the batter into 15 cookies, each cookie will only be about 80 calories.
