I made this tonight for dinner and it was delicious and very quick and easy. The recipe was modified from one on the Field Roast website. This dish (made in the proportions I describe below) will feed approximately two people and comes out to about $1 per serving. I think that each serving contains about 450 calories but that’s just an educated estimate (based on using 1 oz. parmesan and 3 tbsp oil).
If you can’t find Field Roast smoked apple sage vegetarian sausages (a unique combination of sweet granny smith apples, savory Yukon Gold potatoes and pungent rubbed sage and ginger), ask your local grocery store or natural foods store to carry them. I found them at Whole Foods.
Polenta with Smoked Apple Sage Sausage
Ingredients (these measurements are not exact at all)
1 smoked apple sage sausage, peeled and crumbled
1/4 cup chopped onion
dried oregano (a shake or two)
1 cup water
1/3 cup cornmeal
3-5 tbsp fresh parmesan
vegan butter or oil (or regular butter)
Unrelated wine note: I opened a bottle of Charles Shaw Shiraz (a.k.a. “Three Buck Chuck”) several days ago and it was just ok. I corked it with my trusty Vacu Vin wine stopper (thank you, former employer Williams-Sonoma!), waited several days, and tonight it was so much better! I guess it just needed some air?
