Two nights in a row, friends have come over bearing bottles of fantastic red wine. Last night, it was Anya and Mike with a bottle of something delicious that has since been displaced to the recyclying bin outside and tonight, it was Clay with a bottle of Pepperwood Grove Syrah. That is some good shit, ok?
Last night was a failed attempt at peppermint brownies but tonight I redeemed myself with a Greek Casserole (that isn’t actually Greek in any discernible way except for maybe the feta). I based it on this recipe which was originally vegan. This may be the first time that I un-veganized a recipe but it turned out amazingly delicious and received rave reviews from both Clay and my roommate. Please forgive the photo– there wasn’t much left by that point.
This meal cost about $2-4 per serving (it made 4-6 servings).
